Pork carries no nickel worth counting, and the measurement that comes closest says why in a useful way. A survey of 170 samples of 43 convenience and fast foods eaten in Spain found pork- and egg-based dishes the highest of the set — and the whole set ran from 0.019 to 0.095 mg/kg, an order of magnitude below the foods that drive this axis: cocoa, soya, oatmeal, nuts and legumes. What lifts a prepared pork dish is something added to it rather than the meat, the paper naming spices, whole cereals, dried fruit, cheese and mushrooms.
