Potassium metabisulfite

Other names potassium metabisulphite, E224
Potassium metabisulfite: high in histamine. If you're sensitive to any of these, check it against your profile before eating.
Intolerances
- Histamine (+liberators / DAO inhibitors)High
Potassium metabisulfite is the potassium salt in its dimeric form, common in winemaking, and sulfites are not documented as inhibitors of DAO, the enzyme that clears histamine. Sulfites are here because their intolerance looks like histamine intolerance and travels in the same foods — not because a mechanism links them. It is the reason a wine's sulfite level is decided long before bottling. In wine the sulfite question arrives beside two things that DO have a mechanism here: the alcohol, which the reviews do describe as a DAO inhibitor, and the histamine the fermentation itself produced.

Frequently asked questions
Which intolerances does potassium metabisulfite affect?
Potassium metabisulfite is notable for histamine. Clear on tyramine, salicylate, sucrose, FODMAPs, lactose, oligosaccharides, sorbitol, fructose, nickel, oxalates and gluten.
Does potassium metabisulfite contain histamine?
