Frequently asked questions

Which intolerances does oregano affect?

Oregano is notable for salicylate and histamine. Clear on tyramine, sucrose, FODMAPs, lactose, oligosaccharides, sorbitol, fructose, nickel, oxalates and gluten.

Does oregano contain salicylate?

Yes — oregano is high in salicylate. Dried oregano is one of the four culinary herbs an RP-HPLC measurement placed highest in salicylate, alongside cloves and behind dried basil and cumin. Drying is what puts it there: taking the water out leaves the salicylate in a fraction of the weight, so the fresh herb is the lower form of the same plant.

Does oregano contain histamine?

Oregano contains only low levels of histamine. Oregano contains no histamine. A pinch on a pizza is the usual dose, and drying has already removed the water bacteria would need. Herbs are among the few things on this axis that can be used freely, and what SIGHI publishes for them is a compatibility rating rather than a content. Amounts vary by brand and recipe, so always check the label of the exact product.
