Frequently asked questions

Which intolerances does marjoram affect?

Marjoram is notable for salicylate and histamine. Clear on tyramine, sucrose, FODMAPs, lactose, oligosaccharides, sorbitol, fructose, nickel, oxalates and gluten.

Does marjoram contain salicylate?

Marjoram contains moderate levels of salicylate. Closely related to oregano and behaves the same way: the dried form used from a jar is far more concentrated than the fresh herb. Paterson's spice assay gives a salicylate ceiling for the class and no figure for any one spice, so this level is an ordering.

Does marjoram contain histamine?

Marjoram contains only low levels of histamine. Marjoram contains no histamine. It turns up mostly in sausage seasoning, and there the sausage is the question rather than the marjoram, which drying has already emptied of the water bacteria would need. Herbs are among the few things on this axis that can be used freely, and what SIGHI publishes for them is a compatibility rating rather than a content. Amounts vary by brand and recipe, so always check the label of the exact product.
