Magnesium diglutamate

Other names E625
Magnesium diglutamate: moderate in histamine. If you're sensitive to any of these, check it against your profile before eating.
Intolerances
- Histamine (+liberators / DAO inhibitors)Moderate
Magnesium diglutamate (E625) completes the set of glutamate salts, and it is the rarest of them. Which cation is attached changes the solubility and the nutrition panel; it changes nothing about the glutamate, and glutamate is not a liberator. EFSA set the first ADI for these additives at 30 mg per kilo of body weight a day, then found exposure above it — and above DOSES ASSOCIATED WITH ADVERSE EFFECTS IN HUMANS — for some population groups. That answers a different question from the blinded challenge: habitual intake, not a meal.

Frequently asked questions
Which intolerances does magnesium diglutamate affect?
Magnesium diglutamate is notable for histamine. Clear on tyramine, salicylate, sucrose, FODMAPs, lactose, oligosaccharides, sorbitol, fructose, nickel, oxalates and gluten.
Does magnesium diglutamate contain histamine?
Magnesium diglutamate contains moderate levels of histamine. Amounts vary by brand and recipe, so always check the label of the exact product.
