D'où proviennent nos données d'intolérance — et pourquoi vous pouvez leur faire confiance.
Vous vous demandez si vous pouvez faire confiance à ces niveaux ? Chaque niveau d'intolérance vient de science publiée et évaluée par les pairs — des études qui ont réellement mesuré la teneur (histamine, salicylates, FODMAP, nickel…) dans de vrais aliments, pas d'une supposition. Voici exactement d'où viennent les données, et comment nous gérons l'incertitude.
- Science évaluée par les pairs — des teneurs mesurées, pas devinées.
- Prudence en cas de doute — une donnée manquante, on signale plutôt que rassurer.
- Sources indépendantes — bâti sur la littérature primaire que nous citons.
FODMAP, fructose, sorbitol, saccharose
La teneur en FODMAP varie selon l'aliment et sa maturité : on s'appuie sur des études ayant mesuré fructanes, polyols et sucres.
