Note about this food
Hydroxypropyl cellulose is cellulose carrying hydroxypropyl groups, which make it dissolve in water and form a film — the shine on a coated tablet, the body in a low-fat dressing. Cellulose is a glucose chain that no human enzyme can split at all, and attaching side groups makes it no shorter: the molecule stays far longer than the three or four units that ferment. It is a polysaccharide by any reading of the word.
