Note about this food
Glucose oxidase is an enzyme, which means a protein that does one job and is then gone: in dough it converts a little glucose and strengthens the gluten network, and the baking that follows destroys it. Enzymes are used in milligrams per kilogram of flour, they are not present in the food as sold, and a protein is not a carbohydrate — there is nothing here for the sugar axes to measure.
