Note about this food
Vegan butter is an emulsion of plant oils and water built to behave like dairy butter in a pan and on bread, and the thing it is replacing is exactly what it does not contain: there is no milk in it, so no lactose and no milk protein. The oils are usually a blend chosen for melting point rather than for flavour — coconut, shea, rapeseed, sunflower — and none of them is a plant part that concentrates the compounds these axes measure.
