Lard is pork fat rendered out of the tissue, and the rendering is what settles this axis: histamine is built from histidine, an amino acid, and the protein that carries histidine stays behind with the solids. What is poured off is fat. The confusion worth clearing is with bacon rather than with fresh pork — bacon sits higher because it is cured and kept, not because it comes from the same animal, and lard goes through neither of those.
